Ingredients:
Basmati Rice – 1 cup, soaked for 10 minutes and cooked
Spring Onions – 2, finely chopped
Mushrooms – 5, finely chopped
Capsicum – 1, finely chopped
Cabbage – 100 gms, finely chopped
Carrot – 1, finely chopped
Ginger – 1 inch piece, peeled, finely chopped
Garlic – 10 cloves, finely chopped
Vinegar – 1/2 tsp
Oil – 3 tblsp
Ajinomoto – a pinch
Tomato Sauce – 1 tblsp
Garlic Chilli Sauce – 1/2 tsp
Soy Sauce – 1/2 tblsp
Mixed Dry Fruits – few, for garnish
Salt as per taste
Pepper Powder as per taste
Method:
1. Heat oil in a non-stick pan over medium flame.
2. Fry the ginger and garlic for 45 seconds.
3. Add all the vegetables and stir-fry for 2 to 3 minutes.
4. Add ajinomoto, salt, pepper powder and vinegar.
5. Mix well.
6. Add the cooked rice and stir to mix all the ingredients.
7. Add tomato sauce, chilli garlic sauce and soy sauce.
8. Stir well.
9. Heat ghee in a small pan and fry the dry fruits.
10. Garnish the rice with the fried dry fruits.
11. Serve.
