Ingredients:
Spinach – 1/2 cup, chopped
Paneer – 4 slices
Tomato – 1, small, sliced
Red Onion – 1/8 cup, finely sliced
Bread Slices – 4
Garam Masala Powder – 1/4 tsp
Onion – 1/2, chopped
Red Chillies – 1, small, seeded, finely chopped
Garlic – 1 to 2 cloves, chopped
Ginger – 1/2 tsp, grated
Plain Yogurt – 1 tblsp
Lettuce Leaves – handful
Salt as per taste
Pepper Powder as per taste
Olive Oil – 1/2 tblsp
Method:
1. Heat oil in a pan.
2. Add garam masala powder and stir-fry for 30 seconds.
3. Add chopped onions, red chillies, garlic and ginger.
4. Cook for 2 to 3 minutes or till onions are soft.
5. Add the chopped spinach and cook for another minute or two.
6. Transfer the spinach mixture to a blender and puree until smooth.
7. Add yogurt, salt and pepper.
8. Blend again till well combined.
9. Spread the spinach on two bread slices.
10. Add a little lettuce, a slice of paneer, tomato and red onion slices.
11. Cover with the other halves.
12. Serve toasted (or as it is) with ketchup.
Tip: If desired you can fry the paneer slices lightly.
