Ingredients

  • 250 gms Lady’s Finger / Bhindi – 250 gms
  • 1 Tomato (finely chopped)
  • 1 tsp Pepper Powder
  • 1/2 tsp Cardamom Powder
  • 2 Green Chillies (chopped)
  • 2 Onion (finely chopped)
  • 1 tsp Cumin Seeds
  • 1 tsp Garam Masala Powder
  • 2 tsp Red Chilli Powder
  • 1/4 tsp Turmeric Powder
  • 1 tsp Ginger Garlic Paste
  • 1 cup Curd (whisked)
  • 1 tsp Cumin Powder
  • Coriander Leaves (few, chopped)
  • 1 tbsp Oil
  • 1 tbsp Ghee
  • Salt as per taste

Instructions

  • Slit the bhindi’s lengthwise and remove the seeds.
  • Mix little red chilli powder, turmeric powder, cumin powder, pepper powder, garam masala powder and salt.
  • Rub this on the bhindi’s and keep aside.
  • Heat oil in a pan.
  • Stir-fry the bhindis for 2 minutes and remove.
  • Heat ghee in a pan.
  • Add cumin seeds, ginger garlic paste and stir well.
  • Add the onions, tomatoes, green chillies and cook for a minute.
  • Add the remaining masala powders and stir-fry.
  • Add the reserved bhindis and stir well to mix.
  • Switch off the flame and add the curd.
  • Mix well and place it over low flame.
  • Simmer for 2 minutes and remove.
  • Garnish with coriander leaves.
  • Serve hot.
