- 50 gms Green Beans (trimmed, cut into one inch pieces)
- 1/2 bunch Spring Onions (white part only, chopped)_
- 1 tbsp Garlic (chopped)
- 1/2 inch Ginger (peeled, chopped)
- 1/2 Zucchini (diced)
- 1/2 Carrot (peeled, diced)
- 1/2 Potato (peeled, diced)
- 1 Tomato (small, chopped)
- 1/2 cup Cauliflower Florets
- 1/4 cup Oil
- 1/2 tsp Red Chilli Powder
- 1/4 tsp Turmeric Powder
- 1 Green Chillies (chopped)
- 2 Dry Red Chillies (broken in half)
- 2 tbsp Coriander Leaves (chopped)
- 1/2 cup Yogurt (plain, whisked)
- 3/4 cup Water
- Salt as per taste
Instructions
- Heat oil in a large pan.
- Saute the ginger and garlic for 20 to 30 seconds.
- Add the spring onions and saute for another 30 seconds.
- Add the green beans, zucchini, carrot, potato, cauliflower and stir-fry for a minute.
- Add red chilli powder, turmeric powder, tomatoes, green chillies, red chillies and coriander leaves.
- Stir and cook for a minute more.
- Add the yogurt and pour the water.
- Add salt as per taste and bring the mixture to a boil.
- Reduce flame and simmer for 5 minutes or till the vegetables are cooked and all water has evaporated.
- Transfer to a serving bowl.
- Serve hot.
