Ingredients:
Shrimps – 250 gms, peeled, deveined, halved lengthwise
Apple – 1, small or 1/2, big, peeled, cored, cut into small pieces or into wedges or into strips
Red Onion – 1/2, diced
Red Capsicum – 1/2, diced
Tomato – 1, quartered
Green Chillies – 2, small, slit, deseeded
Coriander Leaves – 1 tblsp, chopped
Tomato Ketchup – 1/2 tblsp
Almonds – 1/8 cup, toasted
Mixed Salad Greens – 2 cups
Salt – 1/2 tsp
Garam Masala Powder – 1/4 tblsp
Garlic – 1 tsp, minced
Lemon Juice – 1 tblsp
Oil – 1 tblsp
Lemon Wedges – 2
Method:
1. Mix the shrimp, 1/2 tblsp oil, 1/2 tblsp lemon juice, garlic, garam masala powder and salt in a large bowl.
2. Keep this in the fridge for 2 hours.
3. Heat the remaining 1/2 tblsp oil in a pan.
4. Saute the marinated shrimps for 3 minutes.
5. Add the tomato ketchup and cook for 45 seconds.
6. Transfer to a bowl and keep aside.
7. Add the capsicum and onions.
8. Toss well and keep the bowl in the fridge until required.
9. Before serving, add the tomatoes, green chillies, coriander leaves, almonds and apples.
10. Toss gently.
11. Place the salad greens on a serving plate.
12. Spoon over the salad on top.
13. Garnish with lemon wedges.
14. Serve.
