Ingredients:
Violet Brinjals – 6, sliced lengthwise
Mustard Seeds – 1/2 tsp
Cumin Seeds – 1/2 tsp
Onion – 1, sliced lengthwise
Green Chillies – 4, sliced lengthwise
Turmeric Powder – 1/4 tsp
Ginger Garlic Paste – 1/2 tsp
Tomatoes – 2, finely chopped
Coriander Leaves – a handful, chopped
Oil – 2 tblsp
Salt as per taste
Method:
1. Heat oil in a pan over medium flame.
2. Fry the mustard seeds and cumin seeds.
3. Add the onions, green chillies and saute till onions are transclucent.
4. Add turmeric powder, ginger garlic paste and salt.
5. Mix well.
6. Add the brinjals and stir well.
7. Cover the pan with a lid for 2 minutes and add the tomatoes.
8. Mix well.
9. Simmer till a thick gravy is formed.
10. Remove and transfer to a serving bowl.
11. Garnish with coriander leaves.
12. Serve hot with rice, roti or chapati.
