Ingredients:
- Pears – 2, ripe, halved or quartered, seeds and stem removed
- Butter – 2 tsp, softened
- Brown Sugar – 1 tsp, soft
- Pancetta – 4 thin slices
- Coral Lettuce – 1/2
- Walnuts – 2 tblsp, chopped
- Blue Cheese – 2 tblsp, crumbled
- Walnut Oil – 2 tblsp
- Red Wine Vinegar
- Salt
- Black Pepper Powder
Method:
- Mix butter and sugar.
- Spread over the cut surface of the pear.
- Place pears cut-side down in a hot pan and cook until the surface is glazed and golden-brown.
- Remove and leave to cool, then crisp the pancetta in the hot pan.
- Remove and drain.
- Spread the greens on plates and scatter over the walnuts and cheese.
- Arrange the pear on top of the salad.
- Drizzle with walnut oil and little red wine vinegar.
- Add a pinch of salt and pepper.
- Serve.
