Ingredients:
- Pineapple – 3 thick slices, cubed
- Bananas – 2, thinly sliced
- Chinese or Asian Pear – 1, sliced
- Star Fruit – 1, sliced
- Cucumber – 1, sliced
- Celery – 1/2, sliced
- Red Onion – 1/2, sliced
- Spring Onion – 1, sliced
- Salt as per taste
- Red Capsicum – 1/2 cup, diced
- Bean Sprouts – 3/4 cup, blanched and drained
- Fresh Coriander – 2 tblsp
For the Dressing:
- Soft Brown Sugar – 2 tblsp
- Lemon Juice – 2 to 4 tsp
- Tamarind Concentrate – 2 tsp
- Sweet Soy Sauce – 3 tsp
- Water – 1 1/2 tblsp
Method:
- Mix the pineapple, banana, pear, star fruit, cucumber, celery, onion and spring onion in a bowl.
- Sprinkle with salt.
- To make the dressing, whisk the sugar, lemon juice and tamarind in a small bowl with the sweet soy sauce and water.
- Pour the dressing over the salad.
- Add capsicum, bean sprouts and herbs.
- Toss lightly.
- Leave it to marinate for about 20 minutes before serving in bowls.
