Ingredients:
- Watercress – 1 1/4 cups
- Radicchio – 1 head, torn into pieces
- Smoked Trout Fillets – 4, skinned
- Ripe Pears – 2
- Lemon Juice – 2 tblsp
- Extra Virgin Olive Oil – 2 tblsp
- Sour Cream – 3 tblsp
- Creamed Horseradish – 2 tsp
- Salt as per taste
- Pepper as required
- Whole Wheat Bread – thinly sliced and buttered
Method:
- Place the watercress and radicchio in a bowl.
- Cut the trout fillets into thin strips and add to the bowl.
- Halve and core the pears, then slice thinly.
- Place in a separate bowl, add 4 tsp of lemon juice and toss to coat.
- Add the pears to the salad.
- To make the dressing, mix the remaining lemon juice and the olive oil together in a bowl, then season to taste with salt and pepper.
- Pour the dressing over the salad and toss well.
- Transfer to a large salad bowl.
- Mix the sour cream and horseradish together in a separate bowl until thoroughly blended.
- Pour into a small serving bowl.
- Serve the salad with buttered bread.
