Ingredients:
- Wild Arugula Leaves – 50 gms
- Fresh Flat-leaf Parsley – 1 tblsp, chopped
- Scallions – 2, finely diced
- Avocados – 2, large
- Lemon Juice – 1 tblsp
- Smoked Salmon – 250 gms
For the Dressing:
- Mayonnaise – 2/3 cup
- Lemon Juice – 2 tblsp
- Finely grated Rind of 1 Lime
- Fresh Flat-leaf Parsley – 1 tblsp, chopped
For Garnish:
- Fresh Flat-leaf Parsley – few sprigs
Method:
- Shred the arugula leaves and arrange in individual salad bowls.
- Sprinkle over the chopped parsley and scallions.
- Halve, peel and pit the avocados.
- Cut them into thin slices.
- Brush with the lemon juice and divide among the salad bowls.
- Mix together gently.
- Cut the smoked salmon into strips and sprinkle over the top.
- To make the dressing, put the mayonnaise in a bowl.
- Add the lemon juice, lime rind and chopped parsley.
- Mix well.
- Spoon some of the mayonnaise dressing on top of each salad.
- Garnish with the parsley sprigs.
- Serve.
