Ingredients

  • 1 to 2 Lemongrass Stalks trimmed and cut into 1 inch lengths
  • 2 to 2 Fresh Galangal Slices
  • 125 g Shrimp peeled, deveined
  • 1/2 cup Mushrooms thinly sliced
  • 1 tbsp Fish Sauce
  • 1 to 2 cup Chicken Stock
  • 1 tbsp Coriander Leaves coarsely chopped
  • 1 Spring Onions finely sliced
  • 1/2 tbsp Thai Chillies finely sliced
  • 1 to 2 tbsp Lime Juice
  • 2 Kaffir Lime Leaves torn

Instructions

  • Combine the lime juice, green chillies, spring onions and 1 lime leaf.
  • Heat a pan over moderate flame.
  • Add chicken stock, lemongrass, galangal and remaining lime leaves.
  • Bring to a boil and cook for 2 minutes.
  • Add the shrimps and mushrooms.
  • Cook for a minute more, until the mushrooms are tender and shrimps are cooked.
  • Add the fish sauce and remove the pan from heat.
  • Transfer to a serving bowl.
  • Add lime juice and stir well.
  • Garnish with coriander leaves.
  • Serve hot or warm.
