Ingredients:
Maida – 3/4 cup
Wheat Flour – 1/2 cup
Oats – 1/2 cup
Walnuts – 1/4 cup, chopped
Baking Soda – 1 tsp
Baking Powder – 1 tsp
Cinnamon – 1 tsp
Cloves – 1/2 tsp
Salt as per taste
Egg – 1
Oil – 1/4 cup
Brown Sugar – 1/2 cup
Soy Milk – 1/2 cup
Carrot – 1 cup, shredded
Method:
1. Combine maida, wheat flour, oats, walnuts, baking powder, baking soda, cinnamon, cloves and salt.
2. Mix well.
3. In an another bowl, whisk the egg, oil brown sugar and milk together.
4. Add the shredded carrots and mix.
5. Pour the egg mixture into the flour mixture and mix well to make a batter.
6. Pour the egg mixture into a greased loaf pan.
7. Bake in a preheated oven at 190C/375F for about 30 minutes or when a knife inserted in the centre comes out clean.
8. Remove and cool.
9. Cut into slices and serve.
