Ingredients:
Chicken Breast – 500 gms, cooked, skinless, boneless, diced
Sesame Oil – 1 tblsp
Garlic – 2 cloves, crushed
Ginger Root – 1 tblsp, grated
Broccoli Florets – 2 cups
Cauliflower Florets – 2 cups, chopped
Red Capsicum – 1 cup, chopped
Soy Sauce – 2 tblsp, light
Lemon Juice – 3 tblsp
Sesame Seeds – 1 tblsp
Coriander Leaves – 1/4 cup, chopped
Basmati Rice – 2 cups, cooked
Method:
1. Heat oil in a pan over medium heat.
2. Saute garlic and ginger for a minute.
3. Add broccoli, cauliflower and capsicum.
4. Saute for another 5 minutes before adding the chicken pieces.
5. Add soy sauce and lemon juice.
6. Cook for a minute more.
7. Sprinkle sesame seeds on top.
8. Garnish with coriander leaves.
9. Remove and transfer to a serving dish.
10. Serve with cooked rice.
