Ingredients:
Brinjal – 1, medium, peeled, cubed
Oil – 4 tblsp
Mustard Seeds – 2 tsp
Cumin Seeds – 1 tsp
Turmeric Powder – 1/2 tsp
Asafoetida Powder – a pinch
Onion – 1 tsp, chopped
Salt as per taste
Besan Flour – 1/2 cup
Red Chilli Powder – 1/2 tsp
Coriander Powder – 2 tsp
Method:
1. Heat oil in a pan.
2. Add the mustard seeds and cumin seeds.
3. Fry for 30 seconds and add turmeric powder, asafoetida and onion.
4. Add the brinjal pieces and salt.
5. Mix well and cook covered for 4 to 5 minutes on medium heat.
6. Remove the lid.
7. Add the besan flour and all the other ingredients.
8. Stir well and cook for another 6 minutes without the lid.
9. Remove and serve hot with rice or roti.
