Ingredients:
Brinjals – 8, sliced
Potatoes – 8, peeled and chopped
Tomatoes – 8, chopped
Red Chilli Powder – 2 tsp
Turmeric Powder – 2 tsp
Coriander Powder – 2 tsp
Cumin Powder – 2 tsp
Garam Masala Powder – 2 tsp
Oil – 8 to 10 tblsp
Water – 8 cups
Sugar as per taste
Salt as per taste
Coriander Leaves – handful, finely chopped
Method:
1. Heat oil in a pan over moderate heat.
2. Add the chopped tomatoes, turmeric powder, coriander powder, red chilli powder, cumin powder and garam masala powder.
3. Add 1/2 tsp sugar and fry the tomatoes over medium heat for 3 to 4 minutes.
4. Add the chopped potatoes and brinjals.
5. Fry for another 4 to 5 minutes.
6. Pour water and cover with a lid.
7. Allow it to cook over medium heat for 4 minutes.
8. Remove the lid and mix well so that the vegetables and the spices are thoroughly blended.
9. Garnish with coriander leaves.
10. Serve hot with rice or roti.
