Ingredients:
Potatoes – 500 gms, peeled and chopped into squares
Tamarind Extract – 1/2 cup
Water – 1/4 cup
Brown Sugar – 2 tsp
Ghee – 1 1/2 tblsp
Mustard Seeds – 1/2 tsp
Turmeric Powder – 1/2 tsp
Red Chilli Powder – 1/2 tsp
Coriander Powder – 1 tsp
Cumin Powder – 1 tsp
Salt as per taste
Green Chillies – 2, thinly sliced
Desiccated Coconut – 2 tblsp
Method:
1. Add brown sugar to the tamarind extract.
2. Heat oil in a pan and add the mustard seeds.
3. Fry for 20 seconds or till they splutter.
4. Add turmeric powder, red chilli powder, coriander powder, cumin powder and fry for a minute over low heat.
5. Add the chopped potatoes.
6. Fry for 1 to 2 minutes.
7. Add salt and mix well.
8. Add water and cover the pan with a lid.
9. Cook, covered, for about 15 minutes.
10. Add the tamarind extract, green chillies and coconut.
11. Mix well and stir.
12. Cover and cook for another 15 minutes.
13. Transfer to a serving dish.
14. Serve hot as a side dish to rice or roti.
