Ingredients:
Prawns – 2 cups, cleaned and prepared
Butter – 2 tblsp
Onion – 1, large, chopped
Ground Black Pepper – 1 tblsp
Garlic – 1 tsp, minced
Lemon Grass – 12 strips, each 4 inch long, cleaned
Basmati Rice – 2 cups, washed
Salt – 1 tsp
Coriander Leaves – 1 tblsp
For Marinade:
Salt – 1/2 tsp
Lime Juice – 1 tsp
Turmeric Powder – 1/2 tsp
Method:
1. Mix the marinade ingredients and rub into prawns.
2. Keep it aside for 15 minutes.
3. Melt butter in a flat pan over medium heat.
4. Add onion, pepper, garlic and lemon grass.
5. Fry until onion is transparent.
6. Add the marinated prawns along with marinade.
7. Reduce heat to low heat, cover and cook for 3 minutes.
8. Add rice, 1 tsp of salt and cover rice with water. Add 2 cups of water for every cup of rice.
9. Cover and cook for 15 minutes.
10. When the rice is cooked, remove the strips of lemon grass.
11. Garnish with coriander leaves.
12. Serve hot.
