Ingredients:
Brinjals – 1/2 kg
Tamarind Pulp – 2 cup
Oil – 2 cups + 5 tblsp
Dried Red Chillies – 4
Kalonji (Nigella Seeds) – 1 tblsp
Curry Leaves – 1 sprig
Onions – 5, finely chopped
Salt – 2 tsp
Sugar – 2 tblsp
Method:
1. Wash brinjals.
2. Make a slit at the base till 3/4th of the way up.
3. Heat 2 cups of oil in a kadai and fry the brinjals for 5 minutes over moderate heat.
4. Drain and remove excess oil.
5. Heat 5 tblsp of oil in another pan.
6. Saute red chillies, kalonji and curry leaves for a minute.
7. Add onions and saute till light brown.
8. Add the tamarind pulp and bring to boil.
9. Lower heat and add salt and sugar.
10. Stir well.
11. Add the fried brinjals and 1 cup of water.
12. Stir gently and simmer over low heat for 10 minutes.
13. Remove from heat.
14. Serve hot with rice.
