Ingredients

  • 1 tbsp Olive Oil
  • 1 Onion (chopped)
  • 400 gms Mixed Beans (drained and rinsed)
  • 1 tsp Dried Oregano
  • 400 gms Tomatoes (chopped)
  • 1 tbsp Tomato Puree
  • 1 tsp Cumin (ground)
  • Tabasco Sauce (optional)
  • Salt as per taste
  • Pepper
  • 4 Soft Flour Tortillas
  • 50 gms Mature Cheddar Cheese
  • Readymade Guacamole (optional)

Instructions

  • Heat the oil in a pan.
  • Add the onion and cook until the onion is softened and slightly golden.
  • Add the oregano, tomatoes, tomato puee, and cumin.
  • Add the drained beans.
  • Stir and bring to the boil.
  • When it starts bubbling, reduce the heat to low.
  • Half cover with a lid and simmer for 10 minutes.
  • Stir the beans occasionally to prevent them from sticking.
  • Add salt and pepper along with a few drops of Tabasco if using.
  • Cook for another 5 minutes, stirring occasionally.
  • Warm the tortilla in a microwave.
  • Place each one on a plate and top with the bean mixture.
  • Sprinkle with Cheddar and top with a dollop of guacamole.
  • Fold in one end of the tortilla and then carefully fold over one side.
  • Gently roll the tortilla over to make a tight and secure burrito.
