Ingredients:
Broad Beans – 250 gms
Turmeric Powder – a pinch
Kopra – 1 one inch piece
Coriander Powder – 1 tsp
Chana Dal – 1 tblsp, fried
Red Chilli Powder – 1 tsp
Oil – 1 1/2 tblsp
Onion – 1, finely chopped
Garlic – 1/2 tsp, ground
Jaggery – 1/2 tsp
For Seasoning:
Curry Leaves – 5 to 6
Mustard Seeds – 1/4 tsp
Cumin Seeds – 1/2 tsp
Urad Dal – 1/2 tsp
Red Chillies – 2
Method:
1. Cut the beans into 1 inch pieces.
2. Boil them with turmeric powder in just enough water to cook till tender and let the water be absorbed while cooking.
3. Grate the kopra and mix it with coriander powder, fried chana dal and chilli powder.
4. Heat oil in a pan.
5. Fry the seasoning ingredients.
6. Add onions and fry for 30 seconds.
7. Add garlic and the boiled beans. Fry well.
8. Add the mixed kopra and jaggery.
9. Cook for about 4 to 5 minutes over low heat.
10. Serve hot with roti.
