Ingredients:
Lamb Pasanda Tikkas – 16
Black Pepper – 1/2 tsp
Ginger – 2 tsp, ground
Garlic – 2 tsp, ground
Raw Papaya – 1 tblsp
Red Chilli Powder – 1 tsp
Salt as per taste
Allspice Powder – 1 tsp
Ghee – 1/2 cup
Very thin stone slates (available with sellers of flooring)
Grind Together:
Green Cardamoms – 6
Cloves – 6
Cinnamon – 1 inch stick
Shah Jeera – 1/2 tsp
For Garnishing:
Onion – 1, sliced in rings
Limes – 4
Mint Sprigs
Method:
1. Flatten the tikkas with a rolling pin to enable them to cook well.
2. Mix together the ground spices, ginger, garlic, papaya, red chilli powder, salt, and allspice powder.
3. Rub well onto the lamb tikkas.
4. Marinate for 2 hours.
5. Heat stone slabs by placing them over a barbecue or hot coals till they are red hot.
6. Baste tikkas with melted ghee.
7. Place them on hot slates, well spread out.
8. Cook on each side till done.
9. Serve with onion rings, lime slices and mint sprigs.
