Ingredients:
Trotters – 6
Marrowbones – 8
Onions – 3, finely sliced
Oil – 3/4 cup
Turmeric Powder – 1/4 tsp
Coriander Powder – 1 tblsp, dry roasted
Ginger – 1 tblsp, ground
Garlic – 1 tblsp, ground
Red Chilli Powder – 1 tsp
Cinnamon – 2 one inch sticks
Salt as per taste
Cloves – 6
Brown Cardamoms – 6, slightly opened
Water as required
Juice of 2 Limes
Coriander Leaves – 1 bunch
Mint Sprigs – few
Method:
1. Remove all hairs from the trotters.
2. Heat oil in a pan.
3. Fry the onions to golden brown.
4. Add turmeric powder, coriander powder, ginger and garlic.
5. Fry till brown and the raw smell disappears.
6. Add cinnamon, salt, cloves and cardamoms.
7. Stir fry together.
8. Add trotters, marrowbones and 6 cups of water.
9. Cook on a slow fire, covered, till the trotters and marrowbones are softened (approx 2 hours).
10. When the bones are cooked, the ghee and fat will float to the top.
11. Add lime juice, chopped coriander leaves and mint sprigs.
12. Simmer for 5 minutes.
13. Remove and Serve hot.
