Ingredients:
Fish Fillets – 500 gms, cut into bite-sized pieces
Seafood Marinade – 2 tblsp
Pineapple – 3 slices, chopped
Capscum – 1, small and sliced
Ginger – 4 slices, shredded
Cornflour – 3 tblsp
Egg Whites – 2, beaten
Oil
Parsley for garnish
For Sauce:
Cornflour – 1 1/2 tsp
Sugar – 1 1/2 tsp
Vinegar – 1/2 tsp
Chicken Stock – 2 tblsp
Pineapple Juice – 1/4 cup
For the Seafood Marinade:
Sherry – 1/2 cup
Sugar – 3 tsp
Ginger – 2 tblsp, grated
Salt as per taste
White Pepper as per taste
Method:
1. To make the seafood marinade, mix all the ingredients in a screw-top jar.
2. Refrigerate until required.
3. Marinade the fish with the seafood marinade and keep aside for 10 minutes.
4. Roll them first in the egg white and then in the cornflour.
5. Deep fry and keep aside.
6. Mix all the sauce ingredients.
7. Heat 1 tblsp of oil and add the sauce.
8. When it begins to boil, add the ginger, capsicum and pineapple.
9. Allow it to simmer.
10. After 4 minutes, add the fish.
11. Garnish with parsley.
12. Serve hot.
