American Chop Suey with Vegetables is my go-to for those nights when I need a hearty, satisfying meal without too much fuss. This cross-cultural dish brings together the best of American and Chinese flavors in one delicious package. Crispy noodles mingle with a zesty tomato sauce loaded with fresh veggies – it’s pure comfort food magic.
About the Recipe
Whether you grew up with this East-meets-West classic or it’s new to you, I guarantee American Chop Suey will become a staple. The flavours are so moreish – a tangy tomato base with aromatic garlic, ginger and chilli notes, plus a rainbow of crisp-tender veggies. Best of all, it’s super easy to customise with your favourite mix-ins.
Why You’ll Love This Recipe
First, who can resist those gloriously crunchy noodles drowning in a flavor-packed sauce? It’s textural heaven. But this dish goes beyond simple comfort food cravings—it’s surprisingly nutrient-dense thanks to all those veggies. You’ll feel good about making this family-pleasing meal again and again. Did I mention it’s also budget-friendly and a breeze to whip up?
Cooking Tips
To get those noodles delightfully crispy, be sure to fry them in batches for even browning. And for max flavor, don’t rush those aromatics – let the ginger, garlic and chili really bloom in the oil before adding the other ingredients.
Serving and Storing Suggestions
This generous recipe serves 4-6 people. If you have leftovers, the noodles will continue to soften in the sauce, so you may want to enjoy the extras within 2-3 days. I like serving it family-style straight from the pan – so much more fun than plating individually.
Nutrient Benefits
Don’t let the comfort food vibe fool you – this dish packs a serious nutrient punch. Between the wholesome noodles, antioxidant-rich tomatoes, fiber-filled veggies and immunity-boosting spices like ginger and garlic, you’re loading up on vitamins, minerals and other plant-based goodness.

Frequently Asked Questions
What kind of noodles should I use?
Any long thin noodle works great – spaghetti, linguine, Chinese egg noodles or rice noodles would all be delicious. Just adjust the cooking time as needed for the type you choose.
Can I make this vegetarian/vegan?
Without a doubt. Just use vegetable stock instead of chicken stock, and omit the butter. For a richer, creamier sauce you could add a dollop of coconut milk.
My kids are picky about spice. How can I tone down the heat?
No problem. Leave out the green chili paste and adjust the other spices to their tastes. You can always add a dash of hot sauce to your own portion.
How do you recommend cooking the veggies?
I like to sauté the heartier veggies like carrots, broccoli and peppers briefly before adding any tender greens like spinach or peas. That way everything keeps its perfect crisp-tender texture.
Can this dish be made ahead?
Sure. Make the sauce ahead, then cook the noodles and toss everything together just before serving so the noodles stay crispy. You may need to add a splash of stock or water to the sauce if it thickens too much.
