Ingredients

  • 500 gms White Fish Fillets
  • 2 Celery Stalks
  • 1 tbsp Seafood Marinade
  • 2 Egg Whites (beaten)
  • 2 tbsp Cornflour
  • 5 cups Fish Stock or Water
  • 2 tsp Soya Sauce
  • Salt and Pepper as per taste

For the Seafood Marinade:

  • 1/2 cup Sherry
  • 3 tsp Sugar
  • 2 tbsp Fresh Ginger (grated)
  • Salt as per taste
  • Pepper as per taste

Instructions

  • To make the seafood marinade, mix all the marinade ingredients in a jar.
  • Close the lid and refrigerate till needed.
  • Chop the fish fillets and blend to a smooth paste.
  • Add the egg whites, marinade and cornflour to the fish paste.
  • Knead to a soft paste.
  • Add a few drops of water if required.
  • Make balls of the paste with a spoon and drop into cold water.
  • Cut celery into thin slices.
