Ingredients:
Pomfret – 350 gms, whole
Fish Sauce – 2 tbsp
Garlic – 2 tsp
Cornflour – 4 tbsp
Oil for frying
Red Chillies – 3, chopped
Kaffir Leaves – 3, chopped
Red Curry Paste – 4 tbsp
Oyster Sauce – 2 tsp
Sugar – 1 tsp
Lemon Juice – 2 tbsp
Green Coriander – 6 to 8 sprigs
Method:
1. Clean the pomfret, remove its fins and cut the belly.
2. Make gashes across it.
3. Marinate it in fish sauce and garlic for 20 minutes.
4. Dissolve the cornflour in water and keep aside.
5. Heat the oil.
6. Coat the pomfret with the cornflour solution and fry until crisp and golden brown.
7. Drain the excess oil and keep aside.
8. Reheat 2 tbsp oil in a kadai.
9. Add the red curry paste along with red chillies, kaffir leaves, oyster sauce, sugar and lemon juice.
10. Saute on high heat for a few minutes.
11. Place the pomfret on a serving platter and pour the prepared sauce on top.
12. Garnish with sprigs of green coriander.
13. Serve hot.
