Ingredients:
Tomatoes – 2
Capsicum – 1
Large Onion – 1
Coriander Leaves – 1 tbsp, finely chopped
Cashewnuts – 1 tbsp
Ginger Garlic Paste – 1 tsp, crushed
Cinnamon Powder – 1/8 tsp
Clove Powder – 1/8 tsp
Garam Masala – 1/2 tsp
Red Chilli Powder – 3/4 tsp
Turmeric Powder – 1/4 tsp
Sugar – 1/2 tsp
Salt as per taste
Oil or Ghee – 2 tsp
Method:
1. Dry roast cashew lightly and grind it coarsely.
2. Semi puree tomatoes and capsicum together.
3. Finely chopp the onions.
4. Heat oil or ghee in a heavy pan and add ginger garlic paste and stir for a moment.
5. Add onions and stir fry till light pink.
8. Add tomato, stir, and bring to boil.
9. Add all other masalas, salt, sugar and crushed nuts. Stir.
10. Cover and simmer till gravy is thick and fat starts separating.
11. Garnish with coriander before serving.
