Ingredients:
Green Brinjal – 3, chopped
Tamarind Extract – 1 cup
Green Chilli – 5
Coconut – 1 cup, grated
Toor Dal – 1 cup, boiled
Pepper – 2 tsp
Turmeric Powder – 2 tsp
Salt as per taste
Coconut Oil – 3 tsp
Red Chilli – 2
Mustard Seeds – 2 tsp
Coriander Leaves
Asafoetida – 1 tsp
Curry Leaves
Method:
1. Heat a pan over moderate heat.
2. Add pepper and fry a little.
3. Add coconut and fry again.
4. Remove and grind both coconut and pepper.
5. Keep aside.
6. In an another pan, heat oil and add green chillies.
7. Add brinjal, turmeric powder and tamarind extract.
8. Let it boil for some time.
9. Add the ground paste.
10. Add salt and continue boiling for 2-3 minutes.
11. Once the gravy has thickened, add the boiled toor dal.
12. For garnishing, heat coconut oil in a pan.
13. Add mustard seeds, red chillies, asafoetida and curry leaves.
14. Fry for 30 seconds and add to the gravy.
15. Garnish with coriander leaves.
16. Serve hot.
