Layered Kuruma Rice

Ingredients:
Basmati Rice – 1 cup
Water – as required
Fresh Cream – 1/2 cup
Chilli Powder – 2 tsp
Ginger Garlic Paste – 2 tsp
Ghee – 7 to 8 tsp
Salt as per taste
Milk – 1 cup (not boiled)
Garam Masala Powder – 1 tsp
Corainder Powder – 1 tsp
Turmeric Powder – 1/2 tsp
Carrot – 1/3 cup
Beans – 1/3 cup
Peas – 1/3 cup
Potato – 1/3 cup
Onion – 1 cup
Tomato – 1 cup
Bay Leaf – 1
Cloves – 1
Cinnamon – 1
Cardamom – 1
Saffron Strands – 1/2 tsp

Method:
1. Soak the basmati rice in water for 10 minutes.
2. Drain.
3. Heat 3 tsp of ghee in a pan, add the rice and fry.
4. Keep aside.
5. Boil the carrot, peas, beans and potato. Keep aside.
6. In a pressure pan, add 2 to 3 tsp of ghee.
7. Add bay leaf, cloves, cinnamon and cardamom.
8. Fry for a minute and add the rice.
9. Add 1 1/2 cups of water and salt.
10. Close the lid and keep it for 2 whistles.
11. In another pan, add 4 tsp of ghee.
12. Add onion, ginger garlic paste and fry for 30 to 45 seconds.
13. Add tomatoes and fry till everything is mixed together.
14. Add chilli powder, 1 tsp coriander powder, 1 tsp garam masala and turmeric powder.
15. Add the boiled vegetables.
16. Add little water and salt.
17. Add milk and saffron strands.
18. Boil for 10 to 15 minutes.
19. Add fresh cream and continue to boil for another 10 minutes.
20. In a big plate, add a layer of rice.
21. On top of the rice, pour a layer of kuruma.
22. Then add another layer of rice followed by another layer of kuruma.
23. Serve.

This Kuruma rice is ideal for Parties or Dinner
