Ingredients:
Mutton – 500 gms, cut into 1 1/2 inch pieces
Oil – 8 tblsp
Cinnamon Sticks – 3, one inch pieces
Cloves – 2
Green Cardamom – 4
Onion – 1, medium, finely sliced
Ginger Paste – 2 tsp
Garlic Paste – 2 tsp
Cumin Powder – 1 tsp
Coriander Powder – 1 tsp
Garam Masala Powder – 1/2 tsp
Salt – 1 1/2 tsp
Yogurt – 1 cup
Juice of 1/2 Lime
Grind to a Paste:
Onion – 1, medium, chopped
Tomato – 1, medium, chopped
Black Peppercorns – 1 tsp, coarsely ground
Coriander Leaves – 1 1/2 cups, chopped
Mint Leaves – 6, chopped
Green Chillies – 10, chopped
Method:
1. Wash the meat and set aside to drain.
2. Put the oil in a pressure cooker on moderate heat.
3. When hot, add the whole spices.
4. Then add the chopped onions and fry till golden brown.
5. Add the ginger and garlic paste.
6. Add little water if required and stir for about 10 minutes.
7. Add the cumin powder, coriander powder and garam masala powder.
8. Add salt and cook for a few minutes.
9. Keep stirring and sprinkle some water if required.
10. Add the ground paste and cook for about 10 minutes.
11. Add the mutton pieces and stir vigorously so that the meat is well coated with the masala.
12. Cook for 10 minutes.
13. Add 1 cup of water to ensure the curry does not stick to the bottom.
14. Pressure cook for 15 minutes.
15. Once it is cool, add the yogurt and lime juice.
16. Let it simmer for a while until the curry thickens and the oil separates.
17. Serve hot.
