Bitter Gourd Masala Curry

- 1/2 kg Bitter Gourd
- 3 Tomatoes
- 1 Big Onion
- 1/4 cup Sour Curd
- 1/4 tsp Turmeric Powder
- 1/2 tsp Mustard Seeds
- 1/2 tsp Garam Masala Powder
- 1 tsp Chilli Powder
- 1- inch piece Ginger
- 1/4 cup Scraped Coconut
- 2 tsp Sugar
- 2 tbsp Oil
- Salt (as per taste)
Instructions
- Cut the onion, mince the ginger, and chop the tomatoes.
- Cut the bitter gourd into small round pieces.
- Apply salt to the bitter gourd pieces and let them sit for 30 minutes.
- Grind the coconut separately.
- Heat oil in a pan.
- Temper the mustard seeds and add broken red chillies, then add the onions and fry until transparent.
- Add ginger and chopped tomatoes, and cook until pulpy.
- Drain the bitter gourd pieces and fry them, stirring constantly, for a few minutes.
- Add turmeric powder, chilli powder, and beaten curd.
- Add sugar, salt, and enough water to cover the pieces when the bitter gourd changes colour.
