A delicious curry made with mixed vegetables and served with steamed rice, roti or naan.
Ingredients:
Carrots – 1/4 cup, chopped
Beans – 1/4 cup, chopped
Capsicum – 1/4 cup, chopped
Tomatoes – 1/4 cup, chopped
Onions – 1/4 cup, chopped
Ginger Garlic Paste – 3 tblsp
Cauliflower – 1/4 cup
Green Chillies – 2, chopped
Coriander Leaves – handful
Juice of 1 large Lemon
Butter – 50 gms
Cumin Seeds – 2 1/2 tsp
Red Chilli Powder – 2 1/2 tsp
Cumin Powder – 1 1/4 tsp
Pepper Powder – 1 1/4 tsp
Kasuri Methi – a pinch
Salt as per taste
Method:
1. Heat butter in a pan over medium flame.
2. Add the ginger garlic paste, cumin seeds and fry for 20 seconds.
3. Add the vegetables and mix well.
4. After 30 seconds add the lemon juice, red chilli powder, cumin powder, salt, pepper powder and kasuri methi.
5. Stir to mix well and cook for 5 to 10 minutes or until all the vegetables are cooked.
6. Garnish with coriander leaves.
7. Remove and serve hot.
