Ingredients:
Tomatoes – 1 kg, quartered
Oil – 1/2 cup
Ginger Paste – 1 1/2 tsp
Garlic Paste – 1 tsp
Red Chilli Powder – 1 tsp
Coriander Powder – 1/2 tsp
Cumin Powder – 2 tsp
Onion Seeds – 1/2 tsp
Fenugreek Seeds – 1/2 tsp
Mustard Seeds – 1/2 tsp
Whole Red Chillies – 3
Cherry Tomatoes – 20, blanched
Method:
1. Heat half the oil in a thick bottomed kadai.
2. Add ginger and garlic pastes.
3. Stir fry for a minute.
4. Add red chilli powder, coriander powder, cumin powder and salt to taste.
5. Add tomatoes and stir fry till they are cooked.
6. Heat remaining oil.
7. Add onion seeds, fenugreek seeds, mustard seeds and whole red chillies.
8. Let them crackle and then add to the sauce strained sauce.
9. Add cherry tomatoes to the sauce and simmer for about 4 minutes.
10. Serve immediately.
