Ingredients:
Onions – 1/2 cup, finely chopped
Green Chilli – 1, minced
Garlic – 1 tblsp, minced
Spinach – 2 cups, finely chopped
Cumin Powder – 1 tsp
Salt – 1/4 tsp
Fresh Coconut – 1 tblsp, grated
Plain Yogurt – 1 cup, whisked smooth
For Tempering:
Oil – 1 tsp
Cumin Seeds – 1 tsp
Method:
1. Put the oil in a pan over medium heat.
2. When the oil is hot add the cumin seeds and stir till light brown.
3. Add the onions, green chilli and garlic.
4. Stir-fry for a minute or two.
5. Add the spinach and mix to coat with seasonings.
6. Blend in cumin powder and salt.
7. Cook the spinach till it is slightly wilted.
8. Stir in the coconut.
9. Transfer the spinach to a serving dish and set aside.
10. Stir yogurt into the spinach and mix well.
11. Refrigerate till ready to serve.
