Ingredients:
Potatoes – 4 1/2 cups, boiled, Cubed
Oil – 5 1/2 tbsp
Red Chillies – 5, Cut into half
Mustard Seeds – 1 tsp
Onions – 1/2 cup, Chopped
Garlic – 4 tsp, Chopped
Ginger – 4 tsp, Chopped
Red Chilli Powder – 2 tsp
Turmeric Powder – 1 tsp
Coriander Powder – 1 1/2 tsp
Salt for seasoning
Tomatoes – 1 1/2 cups, skinned, chopped
Green Chillies – 2 tsp, chopped
Lemon Juice – 1 tbsp
Butter – 4 tsp
Method:
1. Heat the oil in a pan and saute the red chillies and mustard seeds over medium flame.
2. Add the chopped onions, garlic and ginger.
3. Saute over high heat for 5 to 6 minutes.
4. Add the red chilli, turmeric, coriander powders.
5. Add salt and stir.
6. Add the chopped tomatoes and simmer on low heat until the oil separates from the gravy.
7. Add the boiled potato cubes, green chillies, lemon juice and salt.
8. Stir and cook for 5 minutes.
9. Melt the butter and pour over the potatoes before serving.
10. Garnish with green coriander.
