Ingredients:
Morel Mushrooms – 800 gms, washed, halved
Vegetable Oil – 4 tbsp
Dry Red Chillies – 10
Onions – 1/2 cup, chopped
Ginger Paste – 6 tsp
Garlic Paste – 6 tsp
Garam Masala – 3 tsp
Dry Fenugreek Leaves – 1 tsp, powdered
Tomatoes – 350 gms, skinned, deseeded
Salt to taste
Coriander Seeds – 2 tsp, roasted, crushed
Black Peppercorns – 1 1/2 tsp
Green Chillies – 6-8, slit
Green Coriander – 3 tsp, chopped
Method:
1. Heat the oil.
2. Add the dry red chillies and onions.
3. Saute and then add the ginger garlic pastes.
4. Cook over medium heat.
5. Add the garam masala, fenugreek powder and tomatoes.
6. Cook over medium heat until the oil separates.
7. Add the morel mushrooms carefully, and toss over high heat until the mushrooms are coated.
8. Cook for 5-6 minutes, stirring occasionally.
9. Add the salt, coriander seeds, black peppercorns, green chillies and green coriander.
10. Serve hot.
