Ingredients:
Potatoes – 1/4 kg
Onion – 1, thickly sliced
Turmeric Powder – 1/4 tsp
Coconut Gratings – 2 tblsp
Tamarind Pulp – 2 tblsp
Salt to taste
For Seasoning:
Oil – 2 tblsp
Mustard Seeds – 1/2 tsp
Curry Leaf – 1 sprig
Fry in 1 tsp Oil and Grind to Paste:
Coriander Seeds – 1 tblsp
Urad Dal – 1/2 tblsp
Red Chillies – 3
Methi Seeds – 1/2 tsp
Method:
1. Boil, peel and break potatoes into fairly large pieces.
2. Grind fried ingredients with coconut, set aside.
3. Heat oil, add mustard seeds.
4. When done, add curry leaves and onion along with turmeric powder.
5. Fry till onion turns brown.
6. Add potatoes, continue to fry till they are slightly browned.
7. Add ground paste and salt, stir fry for 1 to 2 minutes.
8. Add tamarind pulp, stir and cook till masalas are well blended.
9. Serve hot with rice or rotis.
