Ingredients:
Cauliflower – 1, large
Potatoes – 2, medium
Onion – 1, large, chopped
Green Chillies – 3, minced
Ginger – 1 inch piece, minced
Fenugreek Leaves – 1 cup, chopped
Coriander Leaves – 1/2 cup, chopped
Mint – 1/2 cup, chopped
For Seasoning:
Oil – 3 tblsp
Cumin Seeds – 1 tsp
Turmeric Powder – 1/2 tsp
Chill Powder – 1 tsp
Coriander Powder – 2 tsp
Salt to taste
Method:
1. Wash and cut cauliflower into small pieces.
2. Cut potato into cubes.
3. Heat oil, add cumin seeds and when done, add onion and fry till browned adding turmeric powder.
4. Add potatoes, fry for a while, add cauliflower.
5. Continue frying for some time.
6. Add chilli and coriander powders, stir fry.
7. Now add all the greens, fry for some time more.
8. Sprinkle 1/2 cup of so of water, cover and cook on sim till done.
9. Serve hot.
