Ingredients:
For Parathas:
Wheat Flour – 2 cups
Oil – 2 tsp, to mix
Salt to taste
For Filling:
Raw Bananas – 2
Potato – 1 large
Coriander Leaves – 2 tblsp, chopped
Salt to taste
Oil for frying
Grind to a paste:
Onion – 1 medium
Ginger – 1 inch piece
Green Chillies – 3
For Masala Powder:
Turmeric Powder – 1/4 tsp
Chilli Powder – 1/2 tsp
Coriander Powder – 1/2 tblsp
Cumin Powder – 1 tsp
Garam Masala – 1/2 tsp
Method:
1. Add oil and salt to flour, add enough water to make a fairly stiff dough.
2. Keep covered for 45 minutes.
3. Boil banana and potato in their jackets, peel and mash while still warm.
4. Heat 2 tblsp oil, add chopped onions, fry till browned.
5. Add ground paste, continue to fry for some time, adding dry masalas.
6. Take a big lemon size dough and using some oil, shape the dough into a cup.
7. Keep filling in the centre, close the cup.
8. Roll out into a round very carefully, dusting with flour.
9. Heat a tawa, and place the paratha on it and cook till done.
10. Serve hot.
