Frequently Asked Questions

Can I use ground coriander instead of fresh?

You can use ground coriander powder if that’s what you have on hand. Just add a teaspoon or two when sautéing the aromatics. But fresh coriander really does take this soup to the next level, so use it if possible.

How can I make this soup vegan/dairy-free?

No problem. This soup is naturally dairy-free as written. Just use your favorite plant-based milk or broth instead of regular veggie stock.

Can I use other root veggies?

Surely. Try adding diced sweet potatoes, parsnips, or even butternut squash along with the carrots. It’s a great way to use up veggies you have on hand.

How do I thicken this soup?

The potatoes will help create a luxuriously creamy texture. But if you want an even thicker consistency, you can blend in some cooked white beans or use an immersion blender more vigorously.

Will children enjoy this flavorful soup?

Most likely. The natural sweetness from the carrots tends to appeal to kids. Just go easy on any added pepper if serving to little ones. You can also garnish their portions with some fun toppings like croutons or a swirl of yogurt.
