Ingredients

  • 1/4 tsp Cumin Seeds
  • 1/2 tsp Onion Seeds
  • 1/2 tsp Red Chilli Powder
  • 250 g Ladyfingers (Bhindi)
  • 3 tsp Bengal Gram Flour (Besan)
  • 1 tsp Cumin Powder
  • 4 Green Chillies
  • 1 tsp Coriander Powder
  • 1 1/2 tsp Saunf (Fennel Seeds)
  • 1 tsp Dry Mango Powder
  • 1/4 cup Oil
  • 1 tsp Garam Masala Powder
  • 1/2 tsp Turmeric Powder
  • Salt to taste

Instructions

  • Wash and dry the ladyfingers. Trim the ends and make a slit lengthwise.
  • Mix all dry spices except cumin and onion seeds with besan. Add 1 tsp of saunf, 1 tsp oil, and salt. Stuff the mixture into the ladyfingers.
  • Heat oil in a pan; add cumin seeds, onion seeds, remaining saunf, and green chillies. Fry for a minute.
  • Add stuffed ladyfingers and stir-fry for 5 minutes. Cover and cook until tender.
  • Uncover and stir-fry on high heat until crisp. Serve hot.
