A delicious, easy to make Chinese style garlic noodles with chicken for lunch or dinner.
Ingredients:
Plain or Egg Noodles – 400 gms, cooked as per packet instructions
Chicken Fillets – 300 gms, chopped
Onions – 2 tblsp, chopped
Mushrooms – 1/2 cup, sliced
Sugar – 2 tblsp
Rice Wine – 1/4 cup
Soy Sauce – 3 tblsp + 1/2 cup
Cornflour – 2 tblsp
Garlic – 2 tblsp, grated + 1 1/2 cups, chopped
Sunflower Oil – 1/4 cup
Spring Onions – 2 tblsp, chopped
Ginger – 1/4 cup, grated
Oyster Sauce – 1/2 cup
Sesame Oil – 2 tblsp
Coriander Leaves – handuful, chopped
Method:
1. Mix the chicken fillet cubes, rice wine, 3 tblsp soy sauce, grated garlic and corn flour in a bowl.
2. Keep aside.
3. Heat oil in a pan over medium flame.
4. Add the chopped garlic, spring onions, ginger, onions and mushrooms.
5. Saute for 3 to 5 minutes.
6. Add the chicken, 1/2 cup soy sauce, sugar and oyster sauce.
7. Mix well and cook for 5 to 6 minutes.
8. Add the noodles and stir to mix again.
9. Switch off the flame.
10. Add the sesame oil and stir once or twice.
11. Garnish with coriander leaves.
12. Serve.
Tip: If desired, add 1 chopped tomato.
