Cooking Tips

For the best results, cook the veggie masala filling just until the potatoes and carrots are fork-tender but still have a slight bite. Be generous with the spices and fresh herbs. Don’t rush the toasting of the bread – slow and steady gives you that perfect crunch. Shredded cheese melts faster than blocks.

Serving and Storing Suggestions

One loaded Masala Toast Sandwich makes a filling snack or light meal for one. Serve them fresh off the grill with a cooling mint chutney or tangy tamarind sauce on the side. Total prep time is around 30 minutes. Leftovers can be refrigerated for 2-3 days and reheated in the oven or toaster oven.

Get creative. Sauteed bell peppers, corn, peas, spinach, or mushrooms would all work nicely in the masala filling.

Can I bake these instead of grilling?

Yes, you can bake the assembled sandwiches at 400°F for 8-10 minutes until the bread is crispy and the cheese melts.

What spice blend is used?

This recipe uses two popular Indian spice mixes – chat masala (a tangy powder) and garam masala (a warm spice blend like cumin, coriander, cardamom). You can find them at Indian grocery stores or make your own.
