- 300 gms Chicken (chopped, boneless, skinless)

- 2 cloves Garlic (finely chopped)
- 1/2 tbsp Fish Sauce
- 1/2 tbsp Soy Sauce
- 1/2 tbsp Oyster Sauce
- Juice and Zest of 1/2 Lime
- 1/4 cup Coriander Leaves (chopped)
- 1/4 cup Mint Leaves (chopped)
- 1 Red Chilli (small, sliced)
- 1/4 tsp Sea Salt
- 2 tsp Rice
- 3 tsp Oil
Optional:
- 1/4 cup Green Beans (sliced)
- 3 tbsp Basil Leaves (chopped)
- 2 to 3 tbsp Cashewnuts (chopped, for garnish)
Instructions
- Dry roast the rice until golden and remove.
- Allow it to cool.
- Once cooled, grind it coarsely and keep aside.
- Heat oil in a pan over medium flame.
- Add the chicken pieces and onions.
- Stir-fry for 5 minutes or until the onions are browned.
- Add garlic, salt and cook for 3 more minutes or until the chicken is cooked through.
- Add the fish sauce, soy sauce, oyster sauce, lime juice and grated lime zest.
- Mix well.
- Add the coriander leaves and mint leaves.
- Add the red chillies and ground rice.
- Mix well and remove after a minute.
- Serve with rice or noodles.
