Ingredients:
250gms pumpkin
5 tablespoons gram flour
1 tablespoon chopped coriander
1 tablespoon curd
salt to taste
oil for frying
Chop fine
3-4 green chillies
1/4 inch piece ginger
3 garlic cloves
Seasoning
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
1/2 teaspoon chilly powder
Method:
1. Grate the pumpkin. Add a pinch of salt, and set aside for a while. Now squeeze the gratings to remove all the water.
2. Heat 2 tablespoons of oil, add the finely chopped ingredients, and fry for half a minute. Add the pumpkin gratings, seasonings, and salt and fry for another minute. Remove from fire and cool.
3. Add the gram flour, curds, and chopped coriander to the pumpkin mixture. Mix well.
4. Using a little oil on your palm, form rolls from the mixture, steam these rolls and set aside to cool.
5. Cut the rolls into two thick slices and form each into a kebab. Roll the kebabs in gram flour and shallow fry in hot oil to golden. Serve very hot.
