Frequently Asked Questions
Can I use mint extract instead of peppermint?
Peppermint extract has a more pronounced cooling sensation than regular mint extract. For the signature flavor, it’s best to use peppermint. However, in a pinch, mint extract can work as a substitute – just increase it to 1 tsp.
How do I get the cookies extra fudgy?
For an extra fudgy, brownie-like texture, reduce the flour to 1 3/4 cups. You can also add an extra 2-3 tbsp of cocoa powder. Just be careful not to overbake.
Can these be made ahead of time?
For freshness, it’s best to bake these just before serving. However, you can make the dough up to 3 days in advance and refrigerate it until ready to bake.
What kind of mint should I use to garnish?
Fresh mint makes a beautiful garnish. Any variety will work, but I especially love the bright flavors of peppermint or spearmint. Just a few fresh leaves add a lovely aroma.
My cookies spread out too much – what happened?
This could result from using butter that’s too soft or warm when mixing the dough. Be sure to use room temperature butter, not melted. Chilling the dough briefly before baking can also help prevent spreading.
