Frequently Asked Questions
Can I use frozen prawns for this recipe?
Yes. Just thaw them completely and pat dry before cooking. Frozen prawns work great, but make sure they’re deveined and peeled first. They might release a bit more water while cooking, so you might need to adjust the sauce thickness.
How spicy is this dish?
The heat level is moderate but customizable. You can reduce the amount of chili paste and fresh chilies for a milder version, or add more if you like it hot. Start with less and adjust to your taste.
Can I prepare the sauce ahead of time?
Yes, you can mix the sauce ingredients up to a day ahead and store in the fridge. But cook the prawns just before serving for the best texture and flavor. The whole dish comes together quickly anyway.
How do I know when the prawns are cooked perfectly?
Prawns cook very quickly. They’re done when they turn from grey to pink and curl into a loose ‘C’ shape. If they curl into a tight ‘O’, they’re overcooked. This usually takes just 2-3 minutes.
What can I substitute for sesame oil?
While sesame oil adds a distinctive flavor, you can use any neutral oil if needed. The dish will still taste good, but you’ll miss some of that authentic Asian flavor. Try adding extra toasted sesame seeds to make up for it.
