White Kurma (also known as White Vegetable Kurma or Chettinad Vellai Kurma) is a popular dish from the Chettinad cuisine. They are best served as a side dish with roti, idiyappam, parotta or with rice.
Chettinad White Kurma

Ingredients:
Potatoes – 1 cup, chopped
Carrot – 1/2 cup, chopped
Beans – 1/2 cup, chopped
Green Peas – 1/2 cup, shelled
Cauliflower – 3/4 cup, finely chopped
Capsicum – 3/4 cup, finely chopped
Onion – 1, finely chopped
Coriander Leaves – handful, chopped
Curd – 1 cup
Coconut Oil – 1 tsp
Oil as required
Salt as per taste

For the Masala:
Green Chillies – 5
Ginger Garlic Paste – 2 to 3 tblsp
Coconut – 1/3 cup, chopped
Cashew Nuts – 4 to 6, blanched
Roasted Gram Flour – 1 tsp
Saunf – 1 tsp
Gasagasa – 1 tsp
Clove – 1
Cinnamon – a small piece

Method:
1. Grind the masala ingredients to a smooth paste and keep aside.
2. Heat oil in a pan over medium flame.
3. Saute the onions until golden.
4. Add the vegetables, salt and pour enough water.
5. Add the ground masala and stir well.
6. Cook until the vegetables are tender.
7. Add the curd, stir well and cook for another minute or two.
8. Just before removing, add the coconut oil and coriander leaves.
9. Remove and serve hot.
