Ingredients

  • 225 gms Chicken Breast (boneless, skinless)
  • 2 cups Cherry Tomatoes (halved)
  • 1/4 cup Kalamata Olives (pitted, coarsely chopped)
  • 1/4 cup Feta Cheese (crumbled)
  • 3 tbsp Lemon Juice
  • 1 Red Onion (finely chopped (optional))
  • Capsicum (finely chopped (optional))
  • 2 tbsp Oregano (chopped)
  • 1/4 tsp Red Chilli Flakes
  • 2 tbsp Olive Oil (1 tbsp)
  • 3 to 4 Cucumbers (chopped)
  • 3/4 cup Plain Hummus
  • 10 to 12 Wheat Flour Tortillas
  • 3/4 to 1 cup Plain Yogurt (optional)

Instructions

  • Heat 1 tblsp olive oil in a pan.
  • Add the chicken and cook for 3 to 5 minutes or until the chicken is no longer pink.
  • Remove and finely chop or shred the chicken.
  • Combine the tomatoes, olives, cheese, lemon juice, oregano, 2 tblsp olive oil, red chilli flakes, yogurt and cucumber in a large bowl.
  • Add the shredded chicken and toss well.
  • Place the tortillas on a flat surface.
  • Spread 1 to 2 tblsp of hummus evenly.
  • Top up with the chicken mixture and roll them up tightly.
  • Cut in half and serve with fries.
