- 3 tbsp Lemon Juice
- 1 Red Onion (finely chopped (optional))
- Capsicum (finely chopped (optional))
- 2 tbsp Oregano (chopped)
- 1/4 tsp Red Chilli Flakes
- 2 tbsp Olive Oil (1 tbsp)
- 3 to 4 Cucumbers (chopped)
- 3/4 cup Plain Hummus
- 10 to 12 Wheat Flour Tortillas
- 3/4 to 1 cup Plain Yogurt (optional)
Instructions
- Heat 1 tblsp olive oil in a pan.
- Add the chicken and cook for 3 to 5 minutes or until the chicken is no longer pink.
- Remove and finely chop or shred the chicken.
- Combine the tomatoes, olives, cheese, lemon juice, oregano, 2 tblsp olive oil, red chilli flakes, yogurt and cucumber in a large bowl.
- Add the shredded chicken and toss well.
- Place the tortillas on a flat surface.
- Spread 1 to 2 tblsp of hummus evenly.
- Top up with the chicken mixture and roll them up tightly.
- Cut in half and serve with fries.
