Ingredients

  • 225 gms Chicken (boneless, skinless, cut into bite-sized pieces)
  • 225 gms Asparagus (trimmed, sliced into 1 inch pieces)
  • 1/2 to 3/4 cup Lettuce (chopped)
  • 1 1/2 cups Basmati Rice (cooked, to serve)
  • Mint Leaves (few, to garnish)
  • 1 tbsp Soy Sauce (+ 1 tblsp)
  • 1/2 tsp Corn Flour (mixed with 1 tsp milk or water)
  • 1/2 tsp Garlic (1/2 tsp, finely sliced)
  • 1 1/2 tbsp Sunflower Oil - 1 1/2 tblsp

Instructions

  • Combine the chicken, 1 tblsp soy sauce, corn starch and 1/2 tsp garlic.
  • Mix well and keep aside for 10 to 15 minutes.
  • Heat half of the oil in a large pan.
  • Add the garlic and stir-fry for 20 seconds.
  • Add 1 tsp water and asparagus.
  • Sprinkle salt and pepper powder.
  • Cook for a minute or two or until crisp and tender.
  • Transfer to a bowl.
  • Add the remaining oil to the pan.
  • Cook the chicken pieces for 2 minutes.
  • Add the lettuce, salt and pepper powder.
  • Stir well and cook for 30 seconds.
  • Add the reserved asparagus and soy sauce.
  • Mix well.
  • Remove and transfer to a serving plate.
  • Garnish with mint leaves.
  • Serve hot with rice.
